First there was the Best Damn Cauli Mash and now I bring you the Best Damn Flax Buns!
I do not take the label ‘Best Damn’ lightly so you know they’re gonna be amazing 🙂
They remind me a lot of multigrain bread and they are hands down my favorite keto bread thus far!
These can be made in the microwave as well as the oven!
* Best Damn Flax Buns *
Beat together eggs, melted butter, salt and pepper.
Add ground flaxseed, cheese, baking powder and sweetener then stir to combine.
Now, you can bake these buns in a whoopie pie/muffin top pan for 10 min at 350 degrees which results in something very similar to a sandwich thin.
This is how I prefer them for sammiches.
Recipe as written will make 8 sammich buns.

You can microwave these in a ramekin (I used these) to produce a thicker, hamburger type bun. Divide the recipe into 4 and microwave each in a lightly oiled ramekin (or microwavable container of choice) on high for about 70 seconds.
Do not overcook, they will get dry and hard!
Recipe as written will make 4 hamburger buns.
These thicker buns are more suitable for a hefty bbq pulled pork and coleslaw!
These buns also toast beautifully and would be great with butter and sugar free preserves. They worked perfectly for a fried egg sammich!
