Butter Buns/Crust

My teenager requested a white bread type bun and so I headed into the kitchen and played around – Butter Buns were born!

This recipe works great for buns but it also makes the most incredible crust!

I have been meaning to make the buns again for grilled cheese sammiches or patty melts but I find myself making the crust each time now.

We call it Sammich Pizza and it’s amazing!

* Butter Buns *

3 eggs
1oz butter
3oz mozzarella cheese
3oz cream cheese
1/3 cup coconut flour, sifted
1/2 tsp baking powder
pinch of salt
2 tbl dried chives (optional)
1/4 tsp onion powder (optional)
1/4 tsp red pepper flakes (optional)

Put butter and cream cheese into a microwave safe bowl and heat on high for 15 seconds then stir. Continue heating in 5 second intervals then stir until mixture is creamy and fully incorporated.

Set mixture aside. Crack eggs into new bowl and whisk. In another bowl, add coconut flour, baking powder, salt and spices (if using) and toss together to combine.

To make this as easy as possible, be sure to prep all of your ingredients like this!

Add mozzarella to cream cheese and butter mixture then microwave in 20 second intervals, stirring each time until mixture is smooth and completely combined.

Quickly dump beaten eggs and flour mixture into the cheese mixture and STIR, STIR, STIR with a fork until completely combined.

You might think the mozzarella has gotten too cool and it wont mix in, but it will.

As long as you have all ingredients prepped, it’s no problem at all!

Now it’s smooth sailing!

Preheat oven to 400 degrees.

Line your pan with parchment paper. PARCHMENT PAPER – no excuses!

For Buns – Spread dough into thin circles on parchment paper.
This recipe will make 12 thins (for 6 sammiches) or 6 thicker buns (which we like slathered in butter and sugarfree preserves!)

Bake buns at 400 degrees 10-12 minutes or until buns are lightly browned, allow to cool on baking sheet. (will update with pics soon!)

For Crust – Spread dough to edges of parchment trying to keep the same thickness throughout.

Bake at 400 degrees for 10 min until just barely brown.

To make Sammich Pizza, add cheese and all of your favorite toppings then bake at 400 degrees for 5 more min.

Put under broiler for an additional minute if desired.

Our favorite at the moment is ham and cheese topped with mayo, mustard and green onions! Bonus points if you toss some shredded lettuce with oil, vinegar and oregano and pile on top of your sammich pizza slice – to die for!

  1. Had this in pizza form tonight. SO GOOD! We added bacon to the ham & cheese & put a little mayo as a base.. definitely needed the mayo & mustard as a last addition, put it over the top!
